Founder Dr. Adiel Tel-Oren (Dr. T), a licensed MD in Europe and Asia, and a Board Certified Nutritionist licensed in the USA, has witnessed allergic reactions in his many patients around the world. Dr. T worked with a baking consultant for a year to develop breads that are artisanal, gluten-free, vegan and made with high quality organic ingredients. AND the breads are hypoallergenic, meaning FREE of all major allergens.

FREE of Major Allergens People who are predisposed to gluten sensitivity are more likely to develop other common food sensitivities, especially to dairy, eggs, corn, soy, peanuts and tree nuts, since these ingredients are present in so many processed foods today, including many gluten-free breads. These ingredients are clinically known to cause a host of mild to severe immune system and digestive reactions, in addition to the more typical allergies. That’s why Green Bakery breads include NONE of these allergenic ingredients.
The Green Bakery facility is 100% free of all gluten, dairy, eggs, soy, corn, peanuts and tree nuts, and we intend to keep it that way. The bakery is also a vegan facility, with no animal products used. Our building is located in the woods of Western Wisconsin, on land owned by an intentional community of people committed to ecological living and maintaining their 250 acres of wild, wooded land and the beautiful river running through it.
